Rob,

Great! That's what this series is intended to be all about, being able to take a look at each of the cocktails I present and getting to understand them at a very personal level.

The recipes I'll be presenting are the ones that "I" think work best for my taste, but I've learned that everybody has their own preference, and so the real experience comes from experimenting on your own and seeing what works best for you.

When debating with other mixologists about the "right" recipe for the Sidecar, it was suggested that perhaps the PH level of each individual might play a role in actually making what my be a balanced drink for one person, an unbalanced drink for another. Not sure about that, but it's one explaination.
OK, after a week of experiments, I have found my preferred mixture to be a 2-1-1.

2oz tequila
1oz Cointreau
1oz Lime Juice

When shaken properly, the water added gives this drink the perfect volume to fill a cocktail glass. This is definately on my favorites list!

And as far as shaking, I prefer the following:

Cubed Ice
50 shakes or stirs

Shaved/cracked Ice
30 shakes or stirs

And maybe I'm just not used to Cointreau. I find when I sip one of these cocktails and roll it around, the taste is great. However, once I swallow, I get that sharp orange peel bite. I guess that's why cocktails are an art form and not a science. Everyone likes something different.

Opps, that last one was supposed to say 3-1-1.

1 1/2 Tequila
1/2 Cointreau
1/2 Lime Juice

When trying to arrive at "a" recipe for almost any cocktail, it can easily become clear that everybody has slightly different tastes. For the Sidecar recipe, this was something that I debated quite a bit with several of my mixologist friends, and everybody had a different ratio that they swore by. So yes, you might find a 2-1-1 ratio to be more to your tastes.

This 3-2-1 ratio for a Margarita is something that I struggled with for a while in order to find something that I felt provided just the right balance of flavors. Gary Regan first suggested this ratio to me once, since he too had been trying to come up with a simple but effective ratio for this popular drink.

One thing to be sure that you do, is to shake (or stir) the cocktail long enough. I often see bartenders just give a couple of weak shakes before straining, which might mix the drink but it won't chill it down enough, and it certainly won't add enough water, which plays a big role in forming the proper balance.

Well, last night was margarita night. I must say Robert, you seem to like your drinks a little heavy on the Cointreau while I prefer it a little lighter. When trying this and the sidecar, I found both to have a sharp and bitter orange peel after taste. Kind of felt like I just ate an orange peel.

I haven't got to experiement too much, but I believe I prefer this one with more of a 2-1-1 ratio. This ratio seems to blend the flavors together a little more. Although I do prefer to use a Reposado, so perhaps I do need to tweak the recipe a little more.

Hopefully tonite I'll try this with 2/3oz and 3/4oz Cointreau.
