Thomas:
Thanks for the update! It's really great to hear when something works for someone else, too! I'm so glad that you like the recipe and that it's a hit with the family. Happy Autumn! Brenda

Hey Brenda, apples are in high season here, so I finally made some of that apple chutney with your recipe. Wonderful stuff! We've used it with bratwurst and pork chops so far. It is a huge hit with my wife. I canned the whole batch but between gifts and home consumption, I'll be cooking up some more very soon. Thanks for sharing the recipe.

Thomas:
Here's a reasonable facsimile of how I made the chutney.

3 - 4 crispy, tart apples - I used Gravenstein but Granny Smith would be a more common alternative - diced
2 large, sweet onions, diced
1 cup currants
1 tsp minced ginger
1 tsp ground cinnamon or a couple of cinnamon sticks
2 chopped dried hot peppers (adjust according to your taste!)
1/2 cup sugar
1/2 cup cider vinegar
1 cup apple cider
6 whole cloves
1 Bay leaf
Salt and pepper

Place all ingredients in a pot, bring to simmer and allow to cook down for 1 - 1 1/2 hours - most liquid should be evaporated.

Can be held in the refrigerator for a month or so. I canned mine (using a standard procedure) into 1 cup jars so it would keep longer and I could enjoy it over time.

Martin:
Great concept - now you just need to fill it out. A great ploughman's platter is lots of little choices and variety.
Hi Thomas!
I'll be happy to share it with you when I'm back home. Fair warning though I had three recipes that I used for inspiration and then kind of put it together on the fly. I think I have pretty good notes on the final concoction though.
