The Lava Flow


There are two words that to me mean pure bliss and relaxation: Poolside. Bar.

And, when I’m sitting in this Shangri-La, I typically crave a particular drink. It is not an intellectual drink. It’s nothing sophisticated, elegant or cultured. It’s the lava flow. Part pina colada, part strawberry daiquiri, all yumminess. And, it’s super easy to make at home. The lava flow also makes a great non-alcoholic treat…just leave out the rum.

While I was in search of coconut syrup for an iced tea recipe, I stumbled upon the Santa Cruz Pineapple Coconut juice… the perfect quick mix. It’s simply delicious with strawberry puree made from the peak season local strawberries. Now, the only thing missing is the cabana boy…

Lava Flow
per serving

The Strawberry Part
Try this strawberry daiquiri recipe
or
1 cup of strawberry puree
1 shot of rum

Combine and freeze for at least one hour.

The Coconut Part
1 cup Pineapple Coconut Juice
1 shot Malibu rum
1 cup ice

Put all the ingredients in a blender, and blend until smooth.

Add one quarter of the strawberry mix to the glass. Top with the coconut mixture. Pour the remaining strawberry mixture in the center, or off to one side. Don’t mix. Garnish with fresh pineapple or strawberry.
