Excellent write up for a sensational drink...
But the Salmonella is a bit of a worry! Niether the acid or the alcohol are in sufficient quantities or exposure time to damage the salmonella.  The reason that salmonella is such a nasty brute is that it only takes a few cells to make you ill, a really really tiny amount.  And lastly, Salmonella is endemic in chickens accross ALL of Europe and some of the US.  That means ALL of the hens in some areas are affected with a strain of salmonella that does NOT affect chickens, that we released into the flock to get rid of the strain that Does affect chickens.  Magnificently this strain whiped out the one that hurts hens, leaving happy well chickens.  Alas, this strain is REALLY bad for humans.  All eggs are semi permiable and so they often absord the salmonella from the chicken.  But, the most important thing when using fresh egg white is to NEVER use battery hen eggs, and always wash the shell before opening it as the slamonella also hangs out there.  Or move to Australia or New Zealand.</description>

					<description>Charles Baker's drinks books are full of egg.  The Grande Bretagne comes to mind and went over well at a recent cocktail party I helped out with.  Baker insists on using extremely fresh eggs.  It helps if you have a &lt;a href="http://cluck.dreamhosters.com/" rel="nofollow"&gt;backyard flock&lt;/a&gt;.  :)
