Padma Lakshmi Shares Cocktail Recipes

padma.gifPopular Top Chef judge (and model and cookbook author) Padma Lakshmi recently took Food & Wine magazine readers behind-the-scenes as she threw a luxuriously opulent party for a few of her closest friends.

Getting the soiree started right, she whipped up a batch of her own Sweet Lime-Ginger Rum Punch, telling F&W, “In India, we constantly serve sweet lime juice, and sometimes make a salty version too.”  With this original variation, Padma stirs in dark rum, fresh cilantro and ginger, giving the special drink a little kick.

Sweet Lime-Ginger Rum Punch
Yield: 8 drinks

2/3 cup water
1/2 cup sugar
2 tablespoons minced fresh ginger
3/4 cup fresh lime juice
2 cups dark rum
2 cups ice, plus more for serving
Lime slices and cilantro leaves for garnish

In a small saucepan, bring the water, sugar and ginger to a boil.  Simmer over moderate heat for 5 minutes. Strain the syrup into a large pitcher, pressing hard on the ginger.  Let cool to room temperature.

Stir in the lime juice, rum and the 2 cups of ice.  Strain into ice-filled glasses and garnish with lime slices and cilantro.

Padma is such a piece of work. I think I almost miss Katie Lee… It cracks me up every time Padma starts the quick fire challenges by saying, “And your time starts…… NOW!” Such a “sense of occasion.” Ha ha … As for cilantro in my cocktail. I’ll have to think about that. It could be interesting.

Erin, I’m glad I’m not the only one that thinks she’s a piece of work. I just have a problem with her credibility on a chef show.

I think Katie Lee’s personality was a little more relaxed, but I think I like Padma better. At least she has a cookbook or two under her belt.

Personally, I think Padma is well qualified. She’s been the host of several travel/food shows, and I have her cookbook (which is amazing). I don’t think they would choose someone without some kind of culinary background to be a host/judge on Top Chef. Oh wait!! They did have Katie! Padma is an excellent speaker, and makes those occasionally corny, scripted lines sound genius.
